Coffee Sourcing

As an independent coffee roaster, one of our most exciting perks is that we get to source the coffees we want to roast and drink ourselves. Our buying decisions are led by taste, traceability, and long-term relationships within the coffee industry. We’re small enough to make big decisions, and that allows us to keep quality as a true commitment - because it’s in our interest (and in our strategy) to roast the coffee we’d want to be served ourselves.

Essentially, this means that as raw coffee prices rise, we aren’t looking for ways to cut corners. Instead, we continue providing you with the coffee you’ve come to love and enjoy. Consistency and quality are values that grow louder over time as we earn your trust, and for us, they’re non-negotiable.

Doghouse

Doghouse is the coffee we invite you to try first.
It’s a single-estate Brazilian coffee that we’ve sourced for the past two seasons from Carmo Coffees, a specialty exporter, via a trader we’ve worked with for years. We trust this coffee. It represents exactly what a house roast means to us, and it’s taken on something of a ritual status.

We started Carringtons Coffee Co to honour the raw ingredient, to showcase its traceability, and to give our customers genuine value for their hard-earned money. Doghouse is the coffee we made for you.

Beyond Traceability

Since importing coffee directly from Finca Villa Natalia in Colombia, our sourcing approach has moved beyond basic traceability.
Traceability is assumed. The work begins after that.

We prioritise relationships with producers, cooperatives, and specialty traders who are closely involved at farm level. We return to coffees we know. We develop repeat relationships. We value continuity over constant change.

Thoughtfully Curated

Each coffee we offer has a defined role.

• Doghouse - Our house coffee. Single-estate Brazil. Uncompromising.

• Decaf - Swiss Water Process. A Colombian project coffee.

• Colombia (Medium Roast) - Mellow, citrus-led. Roasted for balance rather than intensity.

• Ethiopia Yirgacheffe - Coffee from smallholders, processed through a trusted washing station. Always fully traceable.

• PB&J - An intentional blend using coffees from Uganda and Brazil, sourced through producers and exporters we know personally.

• Pawsome - A darker roast blend of three origins for a richer cup, with added character.

• Limited Release - Seasonal coffees that get us excited to roast and share with you. Lighter roasts, full of character and interest.
